You can use your keyboard, or a game controller to steer with. If the software supports it you could even use a USB steering wheel.
Some games like Need For Speed Carbon® (above) have a Nitrous button that will make your car go faster. The PC Interface can press this button for you when you exceed a certain pedal speed.
